Lee’s Sausage Recipe: 2:1 ratio of fatty meat to animal fat; One teaspoon each: salt, rosemary, thyme, sage, garlic powder, dash of red pepper flakes. Alton Brown suggests adding 1-2 tablespoons of brown sugar. Lee has also used maple syrup in the past as well.
